Ingredients:
For the Muffins:
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 7.5 ounces 100% pure pumpkin puree
- 1/2 cup olive oil
- 1 egg
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 3 - 5 teaspoons water
Directions:
Step 1: Preheat your oven to 400 °F (204 °C) and line your muffin pan with cupcake liners
Step 2: In a large bowl whisk together the flour, baking powder, baking soda, cinnamon and salt. Set aside.
Step 3: With your electric mixer beat together the sugar, pumpkin puree, olive oil, egg, milk and vanilla extract. (You can mix by hand as well, the muffins will come out just as delicious)
Step 4: Gradually add in the flour mixture to the pumpkin mixture little by little until everything is fully incorporated.
Step 5: Add the batter to your muffin pan and bake for 16 - 22 minutes, or until toothpick inserted comes out clean.
Step 6: Leave muffins to cool, in the meantime make your vanilla glaze by sifting your cup of powdered sugar into a bowl. Add in your 1/2 teaspoon of vanilla extract, then carefully add in the water. I usually start with 2 teaspoons and then gradually add any additional water in 1/2 teaspoon increments until I reach my desired glaze consistency.
Step 7: Once your muffins have cooled completely dip each muffin top into the vanilla glaze. Allow glaze to harden completely before serving.
