Ingredients:
For the Muffins:
- 1 and 2/3 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 2/3 cup granulated sugar
- 1/2 cup olive oil
- 2 eggs
- 1 teaspoon vanilla extract
- 2 ripe bananas
For the Cinnamon Sugar Topping:
- 1/4 cup granulated sugar
- 1/2 teaspoon cinnamon
- 2-3 tablespoons butter (melted)
Directions:
Step 1: Preheat your oven to 375 °F (190 °C)
Step 2: In a large bowl whisk together the flour, baking soda, cinnamon and salt. Set aside.
Step 3: With your electric mixer, combine the sugar and olive oil.
Step 4: Add the eggs, one at a time, making sure the first egg is well combined before adding the second.
Step 5: Mix in the vanilla extract.
Step 6: Peel the bananas, place in shallow dish/bowl and mash banana’s with a fork.
Step 7: Add the mashed banana’s to the batter and mix.
Step 8: Now add the flour mixture to the batter, little by little, until all of the flour mixture has been added. Turn off the mixer and scrape down the sides and bottom of your bowl making sure all your ingredients have been mixed in. Be careful not to over mix the batter.
Step 9: Line a muffin pan with cupcake liners and pour in the batter.
Step 10: Bake for 16 to 22 minutes or until toothpick comes out clean. Your muffins will be golden on top. While your muffins are cooling make the cinnamon sugar topping.
The Cinnamon Sugar Topping:
Step 11: In a small bowl add the sugar and cinnamon. Stir together with a spoon.
Step 12: In a separate bowl melt your butter.
Step 13: Take a muffin and dip the top of it into the melted butter and then into the cinnamon sugar mixture. Repeat this step until all of your muffins have been topped and coated with the cinnamon sugar. (If I have remaining cinnamon sugar topping leftover, I use a spoon to sprinkle it over top the muffins.)
