Peanut Butter & Honey Rice Krispie Treats

 Ingredients:

  • 5 cups Rice Krispies
  • 1/2 cup smooth peanut butter
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 1 cup of chocolate chips (I use semi-sweet)
  • 1 tsp olive oil

Directions:

Step 1: In a microwave safe bowl warm up the peanut butter and honey until is reaches a smooth and runny consistency. (I heat up the peanut butter and honey in 10 - 20 second increments, stirring after each.)

Step 2:  Once the honey and peanut butter is smooth and liquidly, stir in your vanilla extract.

Step 3: In a large bowl add in 5 cups of rice krispies then pour in the peanut butter and honey mixture. Stir until well combined.

Step 4: Line a 13 x 9 inch baking dish with plastic wrap and pour in your rice krispie mixture. Spread evenly and press down firmly. Set aside.

Step 5: In a microwave safe bowl mix together the chocolate chips and oil. Melt in the microwave, heating in 10 second increments and stirring after each. Once your chocolate is fully melted, pour it  on top of the rice krispies and spread evenly.

Step 6: Refrigerate for a few hours, until the chocolate hardens, cut into squares and serve. Be sure to store any leftovers in the the refrigerator.

Enjoy!
