Ingredients:
- 2 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 sticks (1 cup) butter, softened
- 1/2 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1 cup chocolate chips (I use semi-sweet)
- 1 teaspoon olive oil
- red food coloring (optional)
Directions:
Step 1: In a large bowl whisk together the flour, baking powder and salt. Set aside.
Step 2: With an electric mixer cream together the butter and sugar.
Step 3: Beat in the egg until well combined, then mix in the vanilla and peppermint extract.
Step 4: Gradually stir in the flour mixture.
*Step 5 is optional. If you choose not so make your cookie with the swirl design, simply roll your cookie dough into a log, wrap it in plastic wrap and jump to step 6.
Step 5: Make the swirl design
- Divide cookie dough in half.
- Place half of the cookie dough back into the electric mixer and add some red food coloring. Mix until just combined, don't over mix.
- Form each half into a small log.
- Cut both logs into 3 equal parts. You should now have a total of 6 pieces (3 red pieces and 3 white pieces).
- Form each piece into a rope, then shape them into a triangle.
- Arrange your 6 pieces of cookie dough to alternate in color. (red-white-red-white-red white)
- Re-space your cookie dough so that all 6 pieces are touching at their base.
- Carefully roll the cookie dough into a log and cover in plastic wrap.
- Now roll your cookie log on your countertop using a back and forth motion. This will lengthen your log as well as create the swirl effect pictured.
Step 6: Place your cookie log into the refrigerator for at least 2 hours or overnight.
Step 7: Once you are ready to start baking, preheat your oven to 350 °F (175 °C) and line your cookie sheets with parchment paper.
Step 8: Take your cookie log out of the refrigerator and cut in 1/4 inch thick slices. Bake for 10 - 15 minutes.
Step 9: When your cookies are done baking leave them to cool while you melt your chocolate. Mix 1 cup of chocolate chips with 1 teaspoon of oil. Microwave in 10 -20 second increments, stirring after each.
Step 10: Once your chocolate is fully melted, lay out a large piece of parchment paper and spoon some of your melted chocolate onto it. (spoon just enough chocolate to cover the bottom of a cookie) Place the cookie on top of the melted chocolate. Repeat this process for the rest of the cookies.
Step 11: Allow the chocolate to harden completely before removing from the parchment paper. Plate your cookies and serve.
