Ingredients:
- 2 and 1/2 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 3/4 cup butter (1 and 1/2 sticks of butter) softened
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1/2 cup 100% pumpkin puree
- 1 teaspoon vanilla extract
Cinnamon Sugar for rolling:
- 1/2 teaspoon cinnamon
- 1/4 cup granulated sugar
Directions:
Step 1: In a large bowl whisk together the flour, baking powder, salt and cinnamon. Set aside.
Step 2: Using an electric mixer cream together the butter, granulated sugar and packed brown sugar.
Step 3: Mix in your egg and vanilla extract.
Step 4: Stir in the pumpkin puree.
Step 5: Add in the flour mixture little by little, until all of it has been added.
* If you choose to make the cute pumpkin design with your cookies, scoop some of the dough into a small bowl and dye it green. This will be used to make the stem of the pumpkin. Otherwise you can skip this step.
Step 6: Cover in plastic wrap and refrigerate for at least 1 hour or overnight. This helps your dough to set and makes it easier to handle.
Step 7: Once your dough has had time to chill and you are ready to start baking the cookies, preheat your oven to 400°F (200°C) and mix together your cinnamon sugar for rolling.
Step 8: Scoop about a teaspoon of dough and roll into a ball. About 1 inch in size. Roll in your cinnamon sugar and then place on a parchment paper lined baking dish.
With the bottom of a glass, flatten the dough to about a 1/2 inch thick.
* If you are not making the pumpkin design, you can skip ahead to step 9 and bake your cookies.
To make the pumpkin design:
- Make a small slit at the top of your cookie and slightly stretch open.
- Make 2 curved score lines on the belly of the cookie. This will give your cookie the signature pumpkin look.
- Take a tiny amount of the green colored dough, form into a small ball and add it to the top of your cookie where we created that small slit. This will resemble the stem of a pumpkin.
Step 9: Bake cookies for 6 to 9 minutes. Let cookies cool before plating.
