Peach Blueberry Crumb Cake Recipe




Ingredients: 

For the crumb topping: 

  • 1/4 cup granulated sugar
  • 1/2 cup flour
  • 4 tablespoons butter (melted)

For the cake:

  • 1 cup flour
  • 1 and 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/3 cup granulated sugar
  • 1/4 cup olive oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 - 3 fresh peaches, peeled and sliced
  • ~1/3 cup fresh blueberries
* Powdered sugar for dusting

Directions:


Step 1: Preheat oven to 375 °F (190 °C)


Make the crumb topping:


Step 2: In a medium sized bowl combine the granulated sugar (1/4 cup) and flour (1/2 cup). Set aside.


Step 3: In a separate and microwave safe bowl, melt the butter (4 tbsp or 1/2 stick). Then begin adding the melted butter to the flour and sugar mixture 1 tablespoon at a time. Tossing with a fork after each tablespoon of butter. 


Set the crumb topping aside while you make the cake batter.


Prep your peaches and blueberries:


Step 4: Clean, wash and dry the blueberries and peaches. Then peel your peaches and slice them. I like my peaches sliced thinly.


Make the cake batter: 


Step 5: Line a 9 inch round cake pan with parchment paper and set aside. 


Step 6: In a large bowl whisk together the flour (1 cup), baking powder (1+1/2 tsp), and salt (1/8 tsp). Set aside.


Step 7: In a separate bowl mix together your sugar (1/3 cup) and olive oil (1/4 cup) using an electric mixer.


Step 8: Add in the egg and vanilla extract (1 tsp).


Step 9: Alternate adding in the flour mixture and milk. Mix in a little bit of the flour mixture first, then mix in some milk. Repeat this process until all of the flour mixture and milk have been added into the batter.


Step 10: Pour the cake batter into your prepared cake pan. Then layer the peaches and blueberries on top. Lastly sprinkle the crumb topping over top of the fruit. 


Step 11: Place the cake in the preheated oven and bake for 30 to 45 minutes or until toothpick inserted comes out clean. 


Step 12: Allow cake to cool completely before dusting with powdered sugar.


I like to enjoy this cake with a scoop of some homemade vanilla ice cream.
