Ingredients:
- 2 cups flour
- 3/4 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup butter, softened (2 sticks)
- 1 and 1/2 cups granulated sugar
- 2 eggs
- 2 teaspoons vanilla extract
* additional 1/3 cup sugar for rolling
Directions:
Step 1: In a small bowl whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
Step 2: With your electric mixer, cream together the butter and sugar.
Step 3: Add in the eggs, one at a time. Make sure the first egg is well combined before adding the second. Then add in the vanilla extract.
Step 4: Gradually add in the flour mixture little by little until all of it is added. Mix until just combined.
Step 5: Cover bowl and refrigerate for for at least 1 hour or overnight.
Step 6: Preheat oven to 350 °F (177 °C) and prepare your baking sheet by lining with parchment paper.
Step 7: Take your cookie dough out of the refrigerator. Scoop some dough and roll into a ball, about 1 inch in size.
Step 8: Then roll your ball in granulated sugar and place on your parchment paper lined baking sheet.
Step 9: Bake for 10 to 12 minutes. Leave cookies to cool before serving.
