"Nothing says home like the smell of baking"

Double Chocolate Chip Muffin Recipe




  Ingredients: 

  • 1 and 1/2 cups of flour
  • 1/2 cup cocoa powder
  • 1/2 tsp of salt 
  • 2 tsp of baking powder
  • 1 cup of granulated sugar
  • 1/2 cup of olive oil 
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup of milk       
  • 1 cup of semi-sweet chocolate chips ( Set aside ~1/4 cup to sprinkle on top of muffins)

Directions:


Step 1: Preheat oven to 375 °F (190 °C). 


Step 2:  In a large bowl whisk together the flour, cocoa powder, baking powder and salt. Set aside.


Step 3: Pour the sugar and olive oil into a large bowl or your stand mixer and beat for a few minutes until the sugar and oil are well combined. 


Step 4: Add the eggs to the batter one at a time, making sure the first egg is well combined before adding the second. 


Step 5: Add in your vanilla extract and mix. 


Step 6: Alternate adding the flour mixture and the milk. Add a little bit of my flour mixture first and then some milk. Repeat this process until all of the dry mixture and milk are mixed into the batter. 


Step 7: Once everything is combined turn off your mixer and with a spatula scrape the sides and bottom of my bowl to make sure everything is fully incorporated. 


Step 8: Fold in the chocolate chips. (I fold in 3/4 of a cup and leave 1/4 cup to sprinkle on top.)


Step 9: Line your muffin pan with cupcake liners and add your batter. Sprinkle some chocolate chips on top of each muffin before baking.

 

Step 10: Bake for 18 to 22 minutes or until your toothpick comes out clean.  Best served warm!
